What: Hands-On Salumi-Making Class
Cost: $185 per person (plus HST)
Few things exemplify Italian traditions more than the craft of salumi making. You will learn how to make some of the most iconic: salsiccia (sausage), soppresata, and capicolo. This is a hands-on class in which you will be grinding meat, stuffing casings, and tieing sausage links. You will learn about the types of meat to use and how to properly season it. You will also learn about curing techniques and will be sent home with your own salumi to cure (class is recommended for people who have an appropriate cold room at home to allow adequate time for curing). If you don’t have a cold room (cantina) for curing, the products can be frozen and used for cooking instead. The class will be followed by a fun group pasta meal with a traditional “Sunday sauce” served with braised sausages made in class!
All supplies and equipment included. You only need to show up with a smile.
