In this class, participants will learn the fundamental skills of making tamales from scratch: from dry maize, to delicious warm corn-husk wrapped tamales.
During this hands-on class, you will learn the different stages of preparing your own masa by learning how to nixtamalize dry maize, grind, and prepare masa for tamales.
Additionally, participants will also learn how to slow braise bison in a guajillo-based sauce to fill in the tamales. While enjoying the tamales, we will learn the significance of this traditional dish through storytelling.
Instructor: Marlene Aguilar, community-based cocinera and founder of IREKUARHIKUA.
