CIRTUS-POACHED GULF SHRIMP | Stuffed with Maine lobster, blue crab, grilled Georgia peach, crispy sage, preserved lemon crème fraiche. Paired with Velenosi Pecorino 2023.

QUAIL'S NEST | Poached quail eggs, kataifi, micro turnips, frisée, marigolds, toasted pistachio, farro, strawberry rhubarb jelly. Paired with Freixenet Prosecco Rosé.

BUCATINI ALL'AMATRICIANA | Oven-roasted tomato sauce, smoked pancetta, cippolini onion, balsamic pearls, micro basil. Paired with Saracco Pinot Noir 2021.
