About this Class: It’s time to get your hands messy! In our hands-on format, our Scuola Chef will prepare the signature dish for you to taste in class. You’ll then dive right in to making the recipe yourself from scratch. Take your culinary creation with you at the end of class and enjoy your own hard work at home!
About this Dish: Transport yourself to the snowy mountains of northern Italy with this Milano-Cortina class! While ravioli is a more widely known filled pasta, casunzei (or casunziei) is a unique, half-moon-shaped pasta from Cortina d’Ampezzo in the Dolomite mountains. The filling changes from season to season based on local ingredients. For this winter staple, they’ll be filled with beets and ricotta. In this class, you’ll make your own pasta dough from scratch.
In this class you will:
- Learn about the traditions and culture of Cortina d’Ampezzo
- Observe as our Scuola Chef teaches the group how to make Casunzei all’Ampezzana (Alpine Beet Ravioli)
- Make your own Casunzei from scratch by hand
- Enjoy a menu featuring an antipasto, welcome Prosecco, and Casunzei all’Ampezzana prepared by our Chef alongside a wine pairing

- One ticket purchase is valid for one guest
- This is a hands-off class
- Seating is first-come, first-served
- Class duration is approximate and may vary by 10-15 minutes
- All guests planning to consume alcohol must be able to produce a valid government-issued identification to prove they are 21 or older. Non-alcoholic beverages are available.
- Classes are also suitable for children 8+ who are passionate about Italian cuisine. Guests 15 and under must be accompanied by a supervising adult.
