Join us in the Paramount Teaching Kitchen to celebrate Black History Month with recipes from Gullah Geechee cuisine. Culturally rich Gullah Geechee cooking originated in the eastern islands of South Carolina and Georgia with roots stemming from West Africa. The culinary traditions of the Gullah Geechee region have shaped most of the coastal Southern food we know today. The ingredients are tied to the land and the sea and reflect the seasons they are used in; the techniques are tied to history, family, and tradition.
In today's class, you will make recipes from two Gullah chefs: Smokin Sweet Shrimp & Sausage from Matthew Raiford, and Okra Rice Stir Fry from BJ Dennis. The Shrimp & Sausage recipe will include lessons on spice mixing, searing and sauce making; the Okra recipe will teach you how to stir fry and build flavor. You will learn how to make Raidford's classic Reezy Peezy, which will be prepared for you by the chef: heritage Sea Island Red Peas cooked tender with curry spices and aromatic vegetables.
