About Patrizia Pasqualetti: Gelato Chef Patrizia Pasqualetti shares the art of authentic Italian gelato made with natural and local ingredients. Originally from the Umbria region of Italy, Patrizia's artisanal creations are some of our favorites at Eataly. Patrizia showcases her passion, love, and generational gelato expertise with options for every lifestyle: gluten-free, dairy-free, and vegan.
About this Dish: Join us for a hands-on journey through two signature gelato flavors: bright, seasonal blood orange and rich, indulgent tiramisù. You’ll learn how to select and prepare peak-season blood oranges to capture their vibrant citrus character, and explore the iconic elements of tiramisù—espresso, savoiardi, mascarpone, and cocoa—and how they translate into a silky, layered gelato. Along the way, you’ll craft beautifully balanced recipes that celebrate the refreshing acidity of citrus and the decadent creaminess of one of Italy’s most beloved desserts.
In this Class You Will:
- Learn about the history, traditions, and ingredients of artisanal gelato, and what makes Italian gelato uniquely creamy, balanced, and flavorful.
- Learn how to choose and prepare blood oranges and tiramisù components like a pro, from selecting the sweetest, most aromatic citrus to layering espresso, savoiardi, and mascarpone for depth and richness—all while understanding how each element shapes the final flavor.
- Watch Chef Patrizia create both seasonal blood orange gelato and luscious tiramisù gelato, and taste the contrast between bright, citrus-forward notes and velvety, coffee-kissed indulgence.
