The four-course menu is created by Chef Zach Geerson and showcases Spanish flavors interpreted through a refined, coastal lens, paired with carefully selected wines and served in the intimate setting of Silver King’s main dining room.
Four-Course Dinner Menu
First Course – Tapa Trio
Confit tomato and garlic crostini with jamón Ibérico, crab-stuffed squash blossom with roasted pepper romesco, and octopus en su tinta.
Second Course – Arroz a la King
Saffron rice cooked with Spanish chorizo and duck confit, topped with gambas al ajillo (Florida pink shrimp sautéed with garlic and smoked paprika), sweet peas, and herb alioli.
Third Course – Short Ribs Braised in Tempranillo
Slow-braised short ribs served over patatas bravas with charred baby zucchini and ensalada de hierbas aromáticas.
Fourth Course – Petite Torrija
Sherry-soaked, griddled Spanish-style French toast with stewed cherries, almond crème anglaise, and toasted Marcona almonds.
