Hiyu is a cult-followed winery located in the Columbia Gorge AVA, just two miles from Mount Hood in Oregon. The estate is a true “wild farm,” set in an alpine river valley where cows, chickens, and pigs graze among the vines and surrounding flora. The farming is deeply rooted in nature, following extreme biodynamic principles alongside a non-interventionist approach to winemaking.
Each wine comes from one of sixteen named fields, planted to diverse mixtures of grape varieties inspired by imagined moments in the history of the vine. These small parcels are hand-harvested, fermented with native yeasts, bottled by gravity, and labeled by field name. Across the farm, there are 112 different grape varieties organized into four families: Light Phenomena, Birds of Prey, Constellations, and the Hedgerow. Each reflects the influence of light, stars, animals, and plant life on these alpine wines.
2023 Hiyu Tzum Chardonnay $89.94
Tzum wines are sourced from small, distinct parcels situated between rainforest and desert landscapes throughout the Gorge. These sites reflect a diversity of terrain, elevation, and microclimate, with each planting expressing a unique sense of place. Whether varietal or field blend, the wines capture the identity of their environment.
2021 Hiyu Aesalon $109.94
Aesalon is a field blend of Iberian white and pink varieties including Xarel-lo, Arinto, Verdelho, Albariño, Trousseau Gris, Godello, Albillo Real, and Macabeo. The parcel, located on the southeastern corner of the farm with eastern exposure, was grafted in 2016 from Pinot Gris.
The grapes are dry-farmed, macerated for five days in wood vats, then foot-pressed into neutral barrels where the wine ages for 20 months before bottling. The result is a textured, aromatic, and mineral-driven wine shaped as much by the vineyard ecosystem as by the varieties themselves. Grazing animals, flowering plants, and biodynamic preparations contribute to a living, evolving biome that defines the wine’s character.
2022 Hiyu Eventyr Albariño $69.94
Eventyr, meaning “adventure” or “folktale,” comes from a small vineyard planted to Albariño on Underwood Mountain, an extinct shield volcano at 1,400 feet elevation overlooking the Columbia River. This is always the last parcel harvested, often in early November.
Despite warm vintages, the wine retains striking acidity and intense aromatics. The grapes are hand-harvested, macerated for nine days in wooden vats, then pressed into upright wood fermenters. After primary fermentation, the wine is transferred to barrel where it continues to evolve for six months.
2024 Hiyu Solais Red Blend $74.94
Solais is a blend of all 13 permitted varieties of Châteauneuf-du-Pape, with an emphasis on Grenache and a higher proportion of white and pink grapes than traditionally used. The fruit comes from a one-acre parcel of volcanic sand along the Columbia River.
Fermented as whole clusters, the wine presents visually as a pale rosé but reveals remarkable depth and concentration on the palate. It is vibrant, herbal, and complex, with a distinctive, almost Campari-like bitterness. Designed for versatility, it is especially compelling served slightly chilled.
2022 Hiyu Sean Nós $74.94
Sean Nós is a field blend inspired by the Canary Islands, composed of Pink Negramoll, Listán Negro, Malvasia Fina, Mission, Palomino, and Babosa Negro. The one-acre parcel sits in volcanic sand at the center of the estate.
By co-fermenting red, white, and pink grapes, the wine achieves a translucent strawberry hue and a shifting sensory profile. The interplay of varieties allows the wine to present different tonalities and textures over time, offering a dynamic and evolving drinking experience.
2022 Hiyu Feis $74.94
Feis comes from a one-acre parcel near the river, where soils are deeper and richer in organic matter. In 2016, the vines were grafted from Syrah to a field blend inspired by medieval Southwestern France, including heirloom selections of Cabernet, Cabernet Franc, Merlot, Malbec, Tannat, Abouriou, Fer, and Manseng Noir.
The resulting wine is remarkably aromatic and lifted, emphasizing perfume over structure. It evokes a wild landscape—bramble, herbs, pollen, and sun-warmed earth—offering an experience that feels more atmospheric than grounded, prioritizing scent and energy over traditional markers of fruit and structure.
