Over 2h30, we’ll go through the full process of making a fraisier:
- Génoise preparation – mixing and baking the sponge
- Crème mousseline – explanation + hands-on preparation
- Assembly techniques – layering, positioning strawberries, clean edges
- Final decoration – simple, elegant finish
Some elements (like the crème pâtissière base) will be pre-prepared so we can focus on key techniques and make the most of our time together.

I’m a French pastry chef trained in Paris, specialized in classic French pastries techniques.
I previously owned my own French pastry shop in Lisbon, where I had the chance to fully explore traditional French pastry, play with flavors, and introduce locals to both iconic classics and original creations.
Today, I focus on teaching and sharing this craft. Creating these workshops is a real pleasure for me, I love passing on professional techniques, seeing people gain confidence, and watching them enjoy the process of making beautiful pastries themselves.
