Fresh out of the oven, they are perfect for a cozy breakfast with homemade chocolate hazelnut spread or simply enjoyed with a good coffee for a sweet gourmet break.
In this relaxed morning workshop, a French chef will guide you step by step to bake your own batch of golden madeleines and show you how to prepare a simple homemade chocolate hazelnut spread using praliné and chocolate.
Expect the comforting smell of butter and warm cakes, plenty of tasting, and the joy of sharing freshly baked madeleines together.

Into the Workshop
During the workshop, you’ll work in pairs to prepare your own madeleine batter from scratch.
You’ll learn how to:
- prepare a classic madeleine batter without resting time
- understand the famous madeleine “hump”
- bake perfectly golden madeleines in a home oven
- use simple techniques from French pastry chefs
While the madeleines are baking, the chef will demonstrate how to prepare a homemade chocolate hazelnut spread using praliné and chocolate.
You’ll taste it with freshly baked madeleines and take a small jar home with you.
Each participant leaves with their own batch of madeleines, new pastry skills, and recipes to recreate everything at home.

Welcome & introduction
A short introduction to French pastry culture and the history of madeleines.
Making the batter
Participants prepare their own madeleine batter in pairs while learning the key techniques behind the recipe.
Filling the molds & baking
The batter is piped into traditional madeleine molds and baked in batches.
Chocolate hazelnut spread demonstration
While the madeleines bake, the chef demonstrates how to prepare a quick homemade chocolate hazelnut spread using praliné.
Tasting moment
Enjoy freshly baked madeleines with the homemade spread.

Meet your chef
I’m a French pastry chef trained in Paris, specialized in classic French pastries techniques.
I previously owned my own French pastry shop in Lisbon, where I had the chance to fully explore traditional French pastry, play with flavors, and introduce locals to both iconic classics and original creations.
Today, I focus on teaching and sharing this craft. Creating these workshops is a real pleasure for me, I love passing on professional techniques, seeing people gain confidence, and watching them enjoy the process of making beautiful pastries themselves.
Whether you’re a beginner or already baking at home, I’ll guide you step by step.
