Growing a salad indoors is possible year round with microgreens and sprouts. Both are forms of nutrient-dense, immature greens that are grown quickly with minimal supplies and cost. Most can be harvested within a week to 10 days. Sprouts are typically grown in jars or sprouter trays with just water and the entire root, stem and seed leaf is eaten. Microgreens, on the other hand, are grown mostly in a shallow pan of soil and harvested for the stem and early leaf.
The microgreens and sprouts that will be a focus of the class are those that are easy, economical, and produce the best volume or flavor punch, such as pea shoots, sunflower shoots, radish sprouts, and sandwich mixes. After a demonstration, everyone will be able to sample some greens along with a few simple recipes incorporating them. So come and learn how to grow your own salad!
