Katz is a James Beard book award winner and has published 6 books on food and fermentation. Furthermore, he will be joined by Director of Fermentation and Sustainability at Id Est, Mara King. Mara manages fermentation programs at Id Est’s six restaurants and grain mill, she has traveled the world teaching and Republic of Culture is her second foray into film production.

Id Est restaurants will recreate bites from the movies and offer an interactive fermented foods sniffing zoo where you can engage your senses with some of the exciting foods you will see on the big screen.
Fundraiser: Raising funds for post-production on Republic of Culture and for the Slow Food Denver Chapter. Slow Food Denver is the local chapter of the international movement that is working towards good, clean, and fair food for all, here in the Denver metro area.
