S01 - From Hesitation to Action: Building Confidence in Eating Disorder Care
Host: Dr. Zach Appenzeller, Psy.D
Info: Eating disorders are complex, serious, and often life-threatening mental health conditions that demand timely, compassionate, and coordinated care. Yet, access to specialized treatment is frequently limited, leaving many patients without the support they need when they need it most. This introductory session challenges providers not to wait for “perfect conditions” before engaging in eating disorder care. Through exploration of prevalence data, evidence-based treatment models, and the power of a multidisciplinary approach, participants will gain the tools and confidence to meet patients and families where they are. Clinician insights and practical guidance will highlight pathways to developing specialization in eating disorder treatment and collaborating effectively with caregivers and the broader care team.

This presentation will explore the medical severity of eating disorders, criteria for determining level of care, and best practices for medical monitoring and refeeding—including guidance for supporting patients safely in the home environment. Emphasis will be placed on identifying medical instability, understanding progression milestones across medical, nutritional, and psychological domains, and fostering collaboration among care providers. Clinicians will also examine the critical role of caregiver inclusion in treatment planning and explore strategies for integrating medical and therapeutic approaches that promote sustainable recovery.

S04 - Fueling Recovery
Host: Katherine Grubiak, RDN
Info: Early, aggressive nutritional rehabilitation is critical for restoring both physical and psychological health in individuals with eating disorders. In many cases, recovery begins in the home environment—where caregivers play a vital role in supporting refeeding, meal exposures, and weight restoration. This workshop will highlight the dietitian’s leadership role in guiding caregivers through evidence-based nutritional rehabilitation, establishing effective target weight goals, and implementing full food exposure practices necessary for lasting recovery. Through a review of current research, clinical frameworks, and real-world strategies, participants will gain tools to empower families and multidisciplinary teams to confidently pursue full medical, nutritional, and psychological recovery.
đź•‘: 01:00 PM - 03:00 PM
S05 - Introduction to Behavioral Evidenced-Based Treatment
Host: Dr. Zach Appenzeller, Psy.D
Info: Family-Based Treatment (FBT) and Cognitive Behavioral Therapy for Eating Disorders (CBT-ED) are both evidence-based behavioral treatment modalities used in the treatment of eating disorders. While they share a foundation in behavioral change, they differ in how responsibility, motivation, and support are utilized throughout the recovery process. CBT-ED requires individual engagement and the patient’s internal motivation for behavioral change, whereas FBT mobilizes caregivers to take an active role in interrupting eating disorder behaviors and facilitating recovery. This introductory training will explore how FBT and CBT-ED are each applied across eating disorder presentations, highlighting their core principles, similarities, and key differences. Participants will gain an understanding of when individual treatment versus inclusion of a support system may be most advantageous, and how level of care, developmental stage, and recovery needs influence treatment selection.
đź•‘: 01:00 PM - 03:00 PM
S06 - Medical Monitoring in Outpatient Eating Disorder Care
Host: Shelly Bar, MD
Info: Many patients with eating disorders are first seen—and often primarily managed—by medical providers in outpatient settings. Yet, the medical complexity and potential instability of these illnesses can make outpatient monitoring challenging for physicians without specialized training. This presentation will equip providers with the essential knowledge and tools to safely monitor patients with eating disorders, identify warning signs requiring higher levels of care, and collaborate effectively with multidisciplinary treatment teams. Emphasis will be placed on key medical considerations such as vital sign assessment, lab monitoring, cardiac and electrolyte management, and the physiological impact of refeeding. Participants will also explore strategies to engage caregivers in medical conversations, ensuring that families are informed, supported, and empowered partners in care.
đź•‘: 03:00 PM - 03:30 PM
Afternoon Break
Info: Refreshments and Snacks will be provided.
đź•‘: 03:30 PM - 04:30 PM
S07 - Building from the Ground Up
Host: Dr. Zach Appenzeller, Psy.D
Info: Creating an eating disorder treatment program that delivers high-quality, evidence-based care is both challenging and deeply rewarding—especially for smaller teams. In this presentation a medical doctor, psychologist, and dietitian share their experience developing a PHP and IOP program grounded in Family-Based Treatment (FBT) principles and collaborative, multidisciplinary care. Attendees will learn how to translate evidence-based models into real-world program structures, implement effective team roles and communication systems, and integrate medical, nutritional, and psychological treatment in a unified framework. Presenters will also discuss lessons learned in scaling services, maintaining fidelity to evidence-based approaches, and empowering other professionals to create or enhance treatment programs within their own.

S08 - The Medical Case for Family Involvement
Host: Asha Davidson, MD, MPH
Info: Dr. Asha Davidson will examine how family-centered care can be effectively integrated into all levels of eating disorder treatment from a medical perspective. Using real-world examples and two illustrative clinical cases, she will highlight what meaningful family involvement looks like in practice and how it enhances safety, collaboration, and medical decision-making around level-of-care needs. A key focus will be the impact of early, intentional family engagement in higher-acuity settings—particularly how it strengthens discharge planning and significantly improves long-term recovery outcomes as patients transition home. Participants will gain practical strategies for involving families throughout the treatment course, improving cross-disciplinary communication, and supporting caregivers in complex medical and behavioral health contexts. Dr. Davidson will also share essential lessons learned to help providers enhance continuity of care and more effectively partner with family systems.

S12 - The Medical Lens: Addressing Treatment Challenges
Host: Asha Davidson, MD, MPH
Info: Medical providers play a critical role in the assessment, stabilization, and long-term management of patients with eating disorders. Yet, even with evidence-based guidelines, treatment can be challenging due to medical complexity, diagnostic uncertainty, and the intersection of psychological and physical health. This presentation will explore common clinical dilemmas faced by physicians in the treatment of eating disorders, including managing medical instability, coordinating multidisciplinary care, and supporting patient adherence to treatment recommendations. Through the use of case studies, attendees will examine how evidence-based medical and psychiatric interventions can be integrated into a cohesive treatment plan, emphasizing collaboration, compassion, and clinical judgment in real-world settings.
