Eaterland is popular website Eater’s mouthwatering deep dive into over 85 quirky regional dishes that truly define American cuisine, with recipes, essays, and stories from local celebrities and chefs

It takes a certain kind of obsessiveness—one Eater is known for—to really investigate what American food means. In Eaterland, national publication and go-to site for restaurant recommendations, recipes, and food stories, Eater, maps out where to eat, what to eat, and how to eat food that is quintessentially, unequivocally American.
Divided into eight regions, this cookbook is filled with recipes, introductions from notable local chefs or celebrities, and recommendations for restaurants that serve the eclectic, multicultural cuisines that make up American food. This book also celebrates the history of food in the United States, centering Indigenous recipes and cooking techniques, highlighting immigrant influences on local favorites, and illustrating how renowned chefs like Kwame Onwuachi and Tiffany Derry are recontextualizing and modernizing food in America. For anyone who’s wanted to experience Maryland crab soup, toasted ravioli from St. Louis, and Kentucky’s renowned Hot Brown sandwich all without leaving their kitchen, this book is a perfect guide from Eater, the authority on where to eat and why it matters.

ABOUT THE AUTHOR & CONTRIBUTOR

Missy Frederick is the Editorial Director for Eater’s dining team, overseeing a department of editors working on 23 city sites across the country. She has been with the company since 2012, previously working as a Cities Director, Cities Manager, and as the editor of Eater DC, covering the Washington restaurant scene. She is the co-editor of Eater's second cookbook, Eaterland: Recipes and Stories from Across the United States. Her previous employers include The Washington Business Journal, the Washington Examiner, Space News, CD Publications, and the Southampton Press. She is a graduate of the Poynter Leadership Academy for Women (2023). She has also spent 20 years as a professional theater critic for publications such as the Washington Post, DCist.com, and more; her work in arts journalism earned her a fellowship with the National Endowment of the Arts in 2008.

Tim Ebner is a food writer from Washington, DC. He contributes to Eater, Bon Appétit Magazine, and The Washington Post, and frequently writes about foodways across the Mid-Atlantic. In 2020, Tim was recognized by the International Association of Culinary Professionals for his work as a cocktail writer in Edible DC Magazine. He was born in New Jersey (loves all things Bruce and pork roll), grew up in Maryland (which means he puts Old Bay on everything), and married into a Pittsburgh family (complete with a Pittsburgh cookie table). This is his first cookbook project, and he would like to thank his wife Heather for all her loving support.

ABOUT THE MODERATOR

Brinda Penmetsa is the Director of Events and Marketing at Bold Fork Books, Washington D.C.'s only culinary bookstore. Originally from Houston, Texas, Brinda enjoys traveling, cooking, reading, and building community in Washington D.C. She is passionate about food waste reduciton and is currently reading On Booze by F. Scott Fitzgerald.
