Georgio’s Chicago Pizzeria & Pub was founded in 2002, opening its first location in Crystal Lake, Illinois. While the restaurant was new, its deep-dish pizza recipe dates back more than 50 years. Founder Brian Coli learned to make authentic Chicago-style pizza from his father, who was taught by legendary pizza pioneers Alice Mae Redmond and Ruth Hadley—the creators of the original Chicago-style pizza in 1943.
