About this Event

Join us at 100 Mile Table for a deep dive into coals, earth and flavour. Led by Pip Sumbak, this session opens up a world of elemental cooking using GRIT clay pots, flameware casseroles, traditional cooking stones and modern fire techniques. Alongside her, Leia from GRIT will walk through the technical side of the ceramics: how they’re made, how they behave under high heat, and how to use them safely, confidently and repeatedly in a contemporary kitchen.This is ancient technique brought into the now. Cooking that’s instinctive, elemental and wildly expressive.

Across the session, Pip will demonstrate how to harness coals, bury pots directly into embers, and use a Gozney oven as a modern fire tool to achieve depth of flavour you simply can’t replicate indoors. From slow cooking in clay to high-heat stone cooking, guests will see just how versatile these vessels can be when you understand how to work with high heat, not against it.Expect smoke, stories, hands-on technique, and a completely new way of thinking about heat, texture and time. The experience finishes the way all good cooking should: gathered around the table for a shared meal featuring the dishes demonstrated during the class.

On arrival: Pip and Leia will introduce themselves. Pip will share an overview of her approach to cooking with coals and Leia will introduce the ceramics range and speak to the technical side of the vessels: how they’re made, how they perform under high heat, and how to use them with confidence.

2 hours: Pip will then lead a live cooking demonstration exploring a range of techniques using GRIT clay pots, flameware casseroles, flat stones and coals to show the versatility of fire-based cooking. Leia will weave in technical guidance throughout, covering heat behaviour, care, cleaning and practical use at home.

To finish, guests will gather around the table to share a communal dinner featuring the dishes cooked during the demonstration, a relaxed and generous end to an elemental cooking experience.
