This interactive Food as Medicine talk and cooking workshop for women’s health is designed to leave you feeling informed, empowered, and deeply connected to your body in a new way. Our goal is simple but powerful: to give you practical tools you can actually use, help you rethink your relationship with your body(especially your ovaries), and show you how nutrition can be used to support hormones and menstrual health.
--- We’ll begin by creating a safe, supportive space to learn and share, then break down the basics of how women’s hormones work and why rhythm matters for our symptoms and overall well-being.
--- You’ll learn what hormones actually are (not our enemies), how they fluctuate across the menstrual cycle, and how lifestyle factors like stress, inflammation, and blood sugar play a central role in either supporting or reducing symptoms.
--- Most importantly, we’ll translate the science into action, building a hormone-supportive plate using protein, fiber-rich plants, healthy fats, and fermented foods.
--- We’ll close with a hands-on cooking class component, showing how everyday easy and satisfying meals are powerful supports for women’s health, without restriction or overwhelm.

ABOUT BETH…
Hi, good to meet you. My name is Beth. I’m a well-being expert and PCOS girlie (and thriver) with over 10 years of experience (and my own health journey) who’s all about tackling the root causes of health issues and building sustainable, healthy habits, centered around nutrition. I have dual Master’s degrees in Clinical Nutrition and Public Health, and am a Registered Dietitian Nutritionist.
In my full time role at Buffalo Niagara Medical Campus, I lead impactful work designing spaces and systems so individuals and communities can truly thrive, whether that’s directing large-scale health initiatives in health systems, workplaces, and communities; strengthening and rebuilding local food systems; or empowering individuals directly. Most of my work involves strategizing and scaling food as medicine initiatives for a healthier Western NY.
In my private practice, I specialize in women’s health and am a fertility specialist. I provide personalized nutrition care and medical nutrition therapy for patients with PCOS, endometriosis, hypothalamic amenorrhea, Hashimoto’s, and preconception through post-partum nutrition care. I meet individuals where they are, helping them build sustainable habits based on evidence-based strategies and best practices.
As a PCOS thriver, I translate years of firsthand experience reversing my own and others’ chronic disease, combined with rigorous scientific training, into scalable, evidence-based strategies that help individuals, communities, and institutions build sustainable habits and thrive long term. My passion is blending science, strategy, and people power to unlock better health and well-being for all. Everyone deserves to achieve their best health and well-being.
