About this Event
ToPo cheese is a semi-hard, tangy, and spicy cheese from the Azores, Portugal, made from cow's milk known for its firm, yellowish paste with small, irregular holes and a flavor that intensifies with aging from mild and buttery to sharp and peppery. It's produced exclusively on São Jorge island, with aging periods of 3, 4, or 7 months, and is versatile for snacking, cooking, or pairing with wine. ToPo is the nickname of this cheese as the actual name (Sao Jorge) has Protected Designation of Origin (DOP) status.
Class fee is $65 per person. Maximum class size is 12.
