In the morning, the spotlight shines on Chef Roland Passot inside the exceptional Napa Valley Vintners Theater at CIA at Copia. Chef Roland—trained in Lyon, Michelin-starred in San Francisco— is a culinary legend. An engaging, expressive and good-natured raconteur, he’ll whisk you straight into the heart of truffle cuisine with a live demo, weaving in secrets of sourcing, technique, and pairing that only decades of culinary wisdom and skill can teach.
And, yes, you’ll taste it. Following the demo comes a delectable trio of truffle hors d’oeuvres, each one topped with the earthy flavor of real black truffles, perfectly paired with sparkling and still wines selected to complement and elevate the exquisite flavors. Think golden bubbles dancing alongside the intoxicating perfume of truffles—luxury in its most playful form.
Following the Chef Roland experience, you’ll step into the atrium, where you’ll meet the festival’s lovable truffle dogs. Watching these tail-wagging stars as they sniff about reminds us that the hunt for truffles is as much about play and skill as it is about fine dining. Petting is encouraged!
