Brioche is a very versatile buttery french viennoiserie that can be used as the base for several sweet and savory pastries. Students will learn how to mix, shape, and bake this enriched dough in both a sweet and savory application: Brown Butter Cinnamon Rolls and Savory Breakfast Buns. Students will also take home a few additional recipes to try at home after learning how to make their Master Brioche dough so that they may apply knowledge learned in class to new applications.About the instructor:
Cortney Lucia is the pastry chef-owner of Backyard Briar, a catering service for all things sweet. Originally from Starksboro VT, She has been a baker and pastry chef in several of Vermonts well-known restaurants & bakeries. With over 12 years experience in the local food scene, Cortney brings her passion for understanding pastry to the classroom and is excited to bake with you!
Our facility is BYOB.
Class has a maximum of 12 students and a minimum of 6. Classes may be cancelled 4 days ahead of time if minimum is not met. Tickets are refundable up to 7 days before the event.
