In this two-hour class, participants will discover how to make a velvety espresso-infused affogato ganache completely from scratch, master the art of tempering chocolate for shine and snap, and shape beautiful cocoa-bean bonbons.
You’ll learn how to pour and set a slabbed ganache, cut it to perfection, then hand-dip and decorate your creations using professional techniques. The session concludes with molding and piping into cocoa bean–shaped shells - resulting in a delicious harmony of flavour, texture, and craftsmanship.
