This three-hour beef breakdown demonstration offers an in-depth look at how prime cuts are separated and prepared, guided by our Marrow butchers. You’ll learn to identify key muscles, understand where popular cuts come from, and gain a clearer picture of whole-animal utilization—no hands-on work required. We know how to make the meat special but us butchers know that a great dish starts with quality animals and our special guest, Tom Dykstra knows all about that.
