It’s about creating cookies that are thick, gooey, rich, and packed with flavor—with that perfect balance of crisp, golden edges and a soft, tender, melt-in-your-mouth center. The kind of cookies that stay moist, bake evenly, and taste just as incredible as they look.
That’s what people are really asking.
In this Intro to Thick Bakery Cookies class, we’re going beyond the basics and diving into what actually makes bakery-style cookies that good. While I won’t be handing over my exact bakery recipes, you will learn how to create cookies that are just as thick, flavorful, and beautifully baked—right in your own kitchen.
This is a demo-style class, designed to break down the science and chemistry behind thick bakery cookies in a way that actually makes sense. You’ll learn how ingredients work for you, not against you, so you can confidently tweak and create your own recipes instead of relying on guesswork.
We’ll cover:
The role of each ingredient and how it impacts structure, spread, moisture, and texture
How to achieve thick, tall cookies with gooey centers and balanced flavor
Why cookies turn out burnt, dry, flat, or underbaked—and how to fix it
How to control moisture, browning, and overall bake quality
How oven temperature, timing, and environment affect your final product
How to tweak recipes to get your ideal texture, flavor, and finish
You’ll also learn how many bakeries operate using one solid base recipe—and how to transform it into endless flavor combinations. We’ll walk through how to incorporate:
Dry ingredients like spices and flavor enhancers
Extracts and emulsions for deeper flavor profiles
Solid inclusions like chocolates, candies, nuts, and dried fruits
Beyond the dough itself, we’ll cover what truly sets bakery cookies apart—the finish.
You’ll learn:
How to properly top and decorate cookies for that bakery-style look
How to pair flavors with the right buttercreams (because not all buttercreams work for cookies)
How to create cohesive flavor combinations and visually appealing color schemes
Recipes for select buttercreams will be provided so you can recreate these finishes at home with confidence.
A big focus in this class will also be ingredient quality. We’ll break down which ingredients are worth investing in—and which ones won’t make a noticeable difference—so you can get the best results without wasting money.
While this class is demonstration-based, you won’t leave empty-handed. Each student will go home with:
A base cookie recipe to use as a foundation for creating your own flavor variations
Your very own customized gourmet box of thick, chewy cookies, featuring a variety of flavors so you can experience a broad range of combinations
The knowledge and confidence to start developing your own bakery-style cookies
This is your chance to ask questions, troubleshoot your past bakes, and finally understand what’s happening in the bowl and in the oven—so you can stop guessing and start baking with intention.

Ticket Policy (Please Read Before Purchasing)
All class tickets are non-refundable and non-transferable for any reason at any time. This includes cancellations, schedule conflicts, no-shows, late arrivals, illness, or failure to meet class requirements.
By purchasing a ticket, you are reserving a seat in class. Supplies are purchased, prepared, and portioned specifically for each student. Labor is involved in advance preparation and many materials cannot be reused once prepared.
If you cannot attend, you may request a one-time transfer with at least 48 hours notice if space allows, but this is not guaranteed.
Failure to meet class requirements or follow class policies may result in denial of participation without refund.
