A Spanish Wine Dinner
Spanish wines, seasonal dishes, and the revival of ancient winemaking traditions come together for one special evening at Milk of the Poppy on May 21, 2026 at 5:00 PM MDT.
A curated selection of Spanish wines from European Cellars, led by Eric Solomon, will highlight distinctive producers and traditional winemaking styles rooted in terroir, character, and regional expression. The wines will be paired with a vibrant seasonal menu from Chef Marijke Uleman of Cocoon (cocoonexp.com), known for creating thoughtful food experiences centered around seasonal ingredients, New Mexico produce, and communal dining.
The evening highlights Spanish tinajas—traditional terracotta clay vessels used for centuries to ferment and age wine—now making a celebrated return in modern winemaking for the depth, texture, and character they bring to every pour.
