For the inaugural Aatma Session, chef Keith Sarasin welcomes food scholar Dr. Krishnendu Ray for an intimate dinner and public conversation examining Indian cuisine in America — its evolution, its limitations, and the responsibilities carried by those who cook it.
Together, they will explore:
• What we mean when we say “authentic”
• How Indian food became narrowed in the American imagination
• The tension between preservation and contribution
• What responsible evolution looks like in practice
Guests will share a focused, regionally grounded menu prepared by Aatma, alongside a moderated conversation and time for audience questions.
