On Thursday, March 5, at 7pm, Ian McCall, owner of ISM Brewing, will host a community discussion during dinner service focused on:
- The rise, saturation and demise of beverage pairing events
- Shifts in guest expectations and spending habits
- What “value” really means in today’s dining landscape
- How pairing events can evolve to remain relevant and exciting
We’ve all seen pairing dinners boom — and then fade. Rather than guess what our guests want next, we’d rather ask them directly. This is about transparency, dialogue, and building better experiences together
The pairing menu will be available nightly throughout Last Call LB (March 2–10), with the hosted discussion taking place on Thursday, March 5. Guests attending that evening can expect a relaxed, guided conversation woven naturally between courses.
For $39.95, guests will enjoy a three-course, three-beer pairing experience built around seasonality, bold flavors, and value. But this is more than a pairing menu — it’s an invitation to participate in a larger conversation about where these experiences have been and where they’re going.
