Pavlos~Born near Athens and trained in Michelin-starred kitchens across Europe, I am now Chef at Spiti Sou in central Paris, where we give traditional Greek recipes a Parisian twist. Our cuisine is rooted in sharing and hospitality, expressed through mezzes and plates to share. I am also the author of Goûts de Grèce (October, France), featuring 75 traditional recipes celebrating the origins and richness of Greek gastronomy.~

Marios~Classically trained in Michelin-starred kitchens across Europe, with professional experience spanning Amsterdam, Copenhagen, Geneva, and London. Dedicated to pushing culinary boundaries and crafting immersive, memorable dining experiences.Currently leading •Archipelago• & The Sea• a collaborative pop-up series with Table and Candle, blending food, storytelling, and atmosphere.
