Amuse-bouche: A bourbon caramel apple pork belly encrusted with local pecans

Grilled Scallop, grapefruit mousse, topped with caviar and green apple
Third Pairing: La Cadenière, Vallons d'escale Rouge
Roasted half rack of lamb on top of a cherry and Kalamata olive jam, bone marrow whipped potatoes, charred carrot, and cherry bordelaise
Fourth Pairing - La Cadenière, Vallons d'escale Rosé
Cantaloupe Panna Cotta, apple sorbet, garnish with an almond cookie tuile and rose petals
