まずはじめに。
ワインには、「こうあるべき」という形式がある。
異臭は排除され、事故は語られない。
だが、ある種のワイン──ナチュラルワインの世界においては、
こうした“禁忌”こそが、あえて取り上げられることがある。
揮発酸、メルカプタン、DMTS、ブレタノマイセス、TCA──
本来なら欠陥とされるはずのそれらは、
ときに新たな地平を開く導火線として、グラスの中に息づいている。
形式からの逸脱とは、単なる失敗ではない。
むしろそれは、生成の契機である。
形式の強度が高まるほどに、逸脱はより鮮やかに、より美しく浮かび上がる。
それこそが、「脱構築」である。
飲むという行為は、
既存の形式への批評への起点であり、
そしてそれが次なる形式への進化でもある。
その交差点に立ち上がる祝祭――
それが、「脱構築ワインバー」という試みである。

What Is the Deconstructed Wine Bar?
Wine is a ritual of form.
It is governed by shoulds and musts.
Oxidation is shunned.
Deviance is corrected.
Accident is erased.
But in a certain lineage of natural wine,
these very taboos are not suppressed—they are summoned.
Volatile acidity. Mercaptans. DMTS. Brett. TCA.
The so-called “faults.”
In this space, they are not mistakes, but triggers—
thresholds—into other dimensions of the drinkable.
To deviate is not to fall.
To deviate is to generate.
The tighter the form, the more luminous the rupture.
This is not winemaking.
This is critique by consumption.
A metaphysical disturbance poured into a stemmed vessel.
The Deconstructed Wine Bar is a temporary zone
where drinking becomes a speech act,
where flavor is argument,
and where decay, dissonance, and doubt are not filtered out—
but lifted, toasted, and swallowed whole.
