➢ 客座主廚 Chef Félix 介紹
Chef Félix 對料理的熱情始於內湖的一家小咖啡館,當時他還是個年輕的咖啡師,偶爾會到廚房幫忙,卻意外地愛上了烹飪。18歲那年,他決定踏入廚房,從此展開了料理之路。法語專業背景讓他有機會深入法國,並在 Ferrandi Paris 畢業後,進入巴黎的米其林一星餐廳工作,師從 Joël Robuchon 的門徒。隨後,他在巴黎16區一家著名的現代海鮮小館繼續磨練廚藝。
等待法國工作簽證期間,他開始學習日本的魚類技術,並發現自己對沿海城市的新鮮食材情有獨鍾。最後,他選擇移居法國布列塔尼的洛里昂市,並在當地唯一的米其林星級餐廳擔任二廚,與當地農夫合作,從中領悟法國料理的真諦。Chef Félix 將帶來他深耕法式烹飪的豐富經驗,與大家一同分享他對美食的熱愛。
Chef Félix's passion for cooking began at a small café in Neihu. Initially aiming to become a barista, he discovered his love for the kitchen while helping out with food preparation at 18. This sparked his culinary journey. With a background in French studies, Chef Félix had the opportunity to explore France and later graduated from Ferrandi Paris. He began his career working at a Michelin-starred restaurant in Paris under one of Joël Robuchon’s disciples, and later moved to a renowned seafood bistro in the 16th arrondissement.
During his time waiting for a work visa in Taiwan, Chef Félix studied Japanese fish preparation techniques and realized his passion for working in coastal cities with fresh, local ingredients. He eventually moved to Lorient in Bretagne, where he worked at the town's only Michelin-starred restaurant, collaborating closely with local farmers. It was here that Chef Félix truly began to understand the essence of French cuisine—a journey he continues today.
