Chef Shin Kato is an accomplished Japanese culinary professional with over nine years of experience spanning traditional and modern Japanese cuisine, as well as French and Italian cooking. Formerly the Head Chef of Ishizuka, Melbourne’s two-hatted fine dining restaurant, he is recognized for his refined technical skill, creative leadership, and ability to blend classical Japanese principles with contemporary innovation.

Looking forward, Chef Kato is committed to evolving as both a chef and a creator, with aspirations to build his own ventures that celebrate authentic Japanese cuisine on a global stage. Guided by resilience, preparation, and his motto—“Today is the first day of the rest of my life”—he strives to leave a lasting legacy through food, mentorship, and cultural storytelling.

We are also the perfect place for those who love Japanese whiskey and beer!


Located at 360 Victoria Street, North Melbourne, the bar recreates the intimate ambience of Tokyo’s sake bars, complete with polished wooden counters, tatami-style private rooms, and minimalist design inspired by Japanese craftsmanship.
