About this Event
In this workshop, we will be making delicious, buttery treats and getting you comfortable with the whole process of making croissants and danishes so that you can adapt the recipes and flavours in your own kitchen. You will have the option of baking everything off on the Sunday (Dec.8), or you can freeze some of the products and pull them out to bake fresh for a special brunch later in the month.
This workshop is a multi-day process.
Day 1 (Friday.Dec.6) You will be getting started with your croissant dough via direction from a private video link that I will send you the week prior to the workshop. You can fit this part of the workshop into your schedule wherever it works for you on the Friday. It will require about 30 minutes of your day. The video link will demonstrate how to go about getting your dough and butter block started for your croissant dough, and then putting them in the fridge for the night.
Day 2 (Saturday.Dec.7) We will convene as a group in an online classroom (the link also being sent out to you the week prior to the workshop) to go through the steps of mixing our danish dough by hand, and folding in all of the flaky layers of butter, as well as rolling out our croissant dough. Our online session as a group will run for approximately 2.5 hours. Any and all questions are welcome. I will guide you along through the morning from my kitchen, to yours, with two different camera angles to give you a good view of things every step of th way. This day will involve quite a bit of rolling, and give you a good upper body workout! Have your favourite rolling pin at the ready! I will demonstrate how to cut and shape your croissants, as well as shaping techniques for your danish dough which you will be doing on Day 3.
Day 3 This day is a choose-your-own-adventure. You will have quite a bit of product to bake off! You can choose either to roll out, proof, and bake everything, or you have the option to roll, shape and freeze it, or freeze the doughs how they are as blocks for use later in the month (maybe even for a celebratory Christmas meal?!). We'll cover each of the options, in detail, during our time together on the Saturday. Our online group session will be recorded, and you will have access to it for a month in case you need to jog your memory on the different steps involved.
What do I "get" out of this workshop?
You will gain the tips, tricks, and recipes to consistently create beautiful and delicious danishes and croissants. You will receive a recipe booklet in the form of a pdf containing all of the recipes from the workshop, as well as a variety of options you can flavour your croissants and danishes with. You'll have access to the recording of the workshop for a month, so you can return to it for any info that evades your memory.
What tools do I need for this workshop?
Rolling Pin, Mixing Bowls, Knife, a bench scraper would be handy!, Baking Trays, Fridge, Oven, Scale, Parchment, Ruler, Computer.
Who is this workshop for?
Anyone and everyone who is interested in baking. Each ticket is per household (up to a reasonable number of people).
