Step into the first edition of the Videira Dinner Series, an intimate, seasonal culinary experience at Videira Wine Bar in St. Louis.
This debut evening features a four-course menu from Chef Bailey a St. Louis based culinary creative with deep restaurant experience and a highly regarded pop-up reputation known for his thoughtful technique and use of unique, expressive ingredients.
Each course is intentionally paired with expressive wines selected by Videira’s sommelier, followed by a fireside Amaro Nightcap Hour to close the evening.
Course I – Autumn Garden Salad
Pumpkin & endive salad layered with kale and scarlet greens, shaved fennel, and pickled shallots, dressed in a bright verjus vinaigrette — finished with fragrant shaved truffle and a whisper of sumac for warm citrus spice.
Course II – Champagne Branzino
Seared branzino seabass with pearls of trout roe, confit potatoes, and braised bok choy — finished in a luxurious champagne butter sauce with herb oil and fresh picked herbs.
Course III – Bordeaux Braised Beef Cheeks Slow-braised beef cheeks in Bordeaux wine, served over a silky Japanese sweet potato purée, with roasted carrot glazed in plum reduction and dehydrated foraged mushrooms adding earthy depth and texture.
Course IV – Cherry & Chocolate Panna Cotta
Silky cherry panna cotta with dark chocolate and coffee crumble, white chocolate crèmeux, and African blue basil — finished with a spiced cherry gel for a vibrant and aromatic finale.
