P.S. If you’re still reading this… a core memory of my plant-based journey is a VegMichigan event years ago at a Lansing library. Realizing there was community committed to making a difference but no veg restaurant in the Greater Lansing Area to fuel the fight led to the fruition of VEG-N and its many following iterations. Most importantly, it inspires us daily to not give up no matter what is thrown our way.
