Nasi Ulam Master Class: Utilising green bounty from Singapore’s wet markets

Behind the image of a concrete jungle as the result of rapid urbanisation is a long history of peoples who depended on bounty from the island’s lush jungles, hills, rivers, estuaries and the surrounding seas for sustenance. Long gone are the days of the kampongs of Singapore, where home cooks would simply venture into their backyards to forage for a variety of edible wild foliage, which could be found in abundance, as a blessing from the warm tropical climate, in this heart of the Malay Archipelago.
In this Ulam masterclass, discover the culinary uses of the different types of wild herbs, which were once widely foraged and are even now readily available in our wet markets. Revel in the many wonders of Malay gastronomy, including understanding the culinary practices of the peoples of the Nusantara, foodways of the archipelago and the rich culinary history of this small island nation.
Learn to make hearty, healthy and plant-forward heritage dishes, which employ the use of these wild herbs, including the medicinal Nasi Ulam (rice salad of raw herbs), and Botok-botok (steamed fish in banana leaf), and end with a rustic dessert of Lepat Ubi Kayu (tapioca and coconut in banana leaf).
