Trevor Warmedahl, known as the Milk Trekker and the author of the forthcoming book, Cheese Trekking, will be joining us all the way from Arizona to lead a guided cheese tasting at the Co-op on February 10th.Trevor is a cheese expert with years of experience not only making cheese for several artisanal heavy hitters, but travelling the world, immersing himself in local cheese traditions from many cultures (pun intended). He makes it his mission to educate himself and others on traditional and local cheesemaking, saying in one of his substack blog posts:
"These methods of transforming a landscape into shelf-stable food [...] are based more on a well-developed intuition and knowledge base shored up by decades or generations of experience in a place. The senses become sharp and can be trusted, but when we stop using them in this way, when the knowledge of what the foods are meant to look, smell, taste, and feel like is lost, the practices disappear, and we lose our connection with our senses and surroundings."
Trevor plans on bringing some cheeses to the Co-op to taste during this class, in addition to guiding participants through tasting cheeses selected by our own Cheese Department Manager, Beth. Trevor has an incredibly unique and valuable view of the world of cheese and we are thrilled to be able to connect him to our community through this class.
