MUSHUC NINA~NEW FIRE (The equinox and Andean New Year)
Dear friends, acquaintances, and everyone. As you all know, I take great pride in preparing FANESCA each year, with the goal of maintaining the teachings of our grandparents, while not losing my own gastronomic identity, fashioning local products with popular Ecuadorian ingredients.
FANESCA is a truly traditional dish, rich in mysticism because of its preparation process, and it is only eaten in Ecuador. Made from a base of tender squash seeds from a first harvest, this is a dish who’s origin can be traced back centuries to PREHISPANIC times.
Eventually, as a result of the CONQUERORS' influence, the dish came to include dried, salted fish(codfish).
FANESCA is prepare to celebrate MUSHUC NINA which means NEW FIRE in Kichwa. Mushuc Nina is the SPRING Equinox and New Year for the people of the Andes of Ecuador and is a time of purification and new beginnings.
Fanesca, exquisite food for every palate, will be available for purchase this Good Friday, April 18, 2025 and annually.
