Hyper locality & Micro Seasonality – Harnessing flavor and cheating time
- Foragers walked so hyper locality & micro seasonality could run. In previous years, foraging has been rising in popularity, which has brought awareness to Kisetsukan, the Japanese term for the sense of seasons (the traditional Japanese seasonal calendar is divided into 72 micro seasons!)
- How the produce changes within the season, from pungent micro buds of herbs to leggy plants. Micro herbs vs. Grown plants – Rose buds vs. Rose leaves – Unripe bananas vs. Brown bananas”
- “Jar the sunshine” - extend seasons through preservation. Which techniques to apply for maximum flavour extraction or preservation, approaching the ingredients from a multi-angle view to build layers of flavor and cheat time.
Interactive Element: Aromaplate / Tasting
- Micro Coriander vs. Fully grown coriander (or Coriander seed vs micro herb)
- Fresh plums vs. Umeboshi
Layering flavor – Accenting & Contrasting
- What is flavour? Do drinks just taste like something and how does it actually feel? Trigeminal effects and flavour association. Harnessing ingredients in different formats for different outcomes. - The volatilised oils of citrus in an alcoholic solution, vs. a lemon oleo will result in very different influence on experience
- Contrast vs. Harmony - Stimulating taste buds through juxtaposing the core flavor of the cocktail with contrasting modifiers, vs. layering similar flavours to create complexity that goes beyond a single note experience
- What grows together, goes together – and beyond! Shared chemical volatiles with unexpected companions can link up flavors. These can be shared concoctions that plants use to fight against predators or lure pollinators in. Accenting buddy plant volatiles & esters (aka. aromas) of the core flavor can amplify the missing link to complete the flavor profile.

- Black ruby in aroma glasses, served along accenting & contrasting aromatics
- E.g. Fresh lemon peel, cassia bark, dried figs, dried mushroom, Lapsang souchong tea, raspberry coulis, oak chips & makrut lime leaf
Unobvious but purposeful – Creative boundaries & linking the liquid
- Finding unobvious solutions to problems is the framework for creativity, identifying the correct problem is hard. Setting creative boundaries helps identify the problem (i.e. only working with local produce, not having fancy equipment, how to pull out flavors of fermentation without salt) leading to creative new techniques and combinations.
The day will also include food & drink pairings and a World Class alumni takeover, showcasing World Class serves.
