Pull up a chair and join us at The Long Table—a farm-to-table dining experience where Chef Kaytie introduces unforgettable flavors and deep connection, bringing you to the place where timeless traditions meet. Inspired by the lifestyle practices of the world’s Blue Zones, each gathering is a celebration of both wellness, indulgence and longevity.
In Nicoya, the foundation of the table is an ancient Mesoamerican wisdom known as the Three Sisters, corn, beans, and squash. Grown together, cooked together, and meant to be eaten together. Corn rises tall and nourishing, beans climb and enrich, squash spreads wide and protects, each sustaining the other in a quiet act of balance. This agricultural harmony became a culinary one: a way of eating built not on excess, but on interdependence, nourishment, and time.
This Costa Rican evening unfolds through warm, nourishing corn driven courses against bright tropical flavors. A celebration of the three sisters, inspired by the bountiful sea and land of this Pacific coast Blue Zone. Expect refined handmade corn tortillas, steamed corn tamales, sweet Pacific shrimp, red snapper, black beans, fire roasted vegetables and the Nicoyan beef dish Olla de Carne. A gentle, intentional finish of subtle sweetness, corn custard and Costa Rican coffee bring an unhurried close to the meal, inspired by how Nicoyans live and eat.
The full menu will be revealed closer to the event. Traditional beverages will accompanying each course. A vegetarian option for each course will be available for pre-order. Seating is limited.
