Spiced Cranberry Mule
Cranberry juice, ginger beer, and bourbon with a cinnamon stick stirrer and sugared cranberry garnish.
Bread:
Pumpkin Sage Brioche with Whipped Honey Butter
Warm, pillowy brioche rolls infused with pumpkin and sage, served with lightly sweetened whipped honey butter.
Salad:
Harvest Greens with Roasted Delicata Squash, Candied Pecans & Maple Vinaigrette
Autumn greens layered with roasted delicata squash rings, dried cranberries, goat cheese crumbles, and candied pecans, dressed in a maple-balsamic vinaigrette.
Appetizer:
Wild Mushroom & Gruyère Tartlet with Thyme
A flaky puff pastry tartlet filled with wild mushrooms, caramelized onions, and creamy Gruyère, finished with a hint of fresh thyme.
Entrée:
Beef Tenderloin with Bourbon-Peppercorn Sauce
Sliced herb-roasted beef tenderloin topped with a silky bourbon-cream peppercorn sauce. Served with duchess sweet potatoes and roasted Brussels sprouts with pancetta and balsamic glaze.
Entrée (Chicken Alternative): Blackened Chicken “Crimson Veil”
Pan-seared airline chicken breast, rubbed with smoked paprika, black pepper, and cocoa for a dark, dramatic crust. Served over golden parsnip–potato mash (same as the beef course) and finished with a blood-orange port reduction that mirrors the “bloody” element of the filet’s tomato-horseradish demi. Accompanied by black garlic butter green beans for continuity between plates.Garnish: Crispy fried shallot “ashes” and a sprig of fried sage for an eerie, autumnal touch.
Dessert:
Pumpkin Panna Cotta with Gingersnap Crumble
A silky pumpkin-spiced panna cotta topped with whipped cream, gingersnap crumble, and a drizzle of caramel sauce.
