About this Event

Step into the heart of Mexico's culinary soul, where ancient Zapotec traditions meet the vibrant chaos of highland markets. Oaxaca is a place where cooking is ceremony, where recipes are passed down like precious heirlooms, and where the air itself seems to carry the scent of chocolate, chiles, and wood smoke. In this hands-on class, you'll discover why this mountainous region is considered the gastronomic capital of Mexico—a land of seven moles, ancestral corn varieties, and ingredients found nowhere else on earth.

Expect bold, complex flavors built through patience and layers: dark, velvety sauces that take days to prepare, handmade cheeses stretched and shaped by generations of the same families, and the ever-present corn transformed into dozens of forms. You'll work with ingredients that might surprise you—from chocolate ground on volcanic stone to herbs gathered from Sierra mountain slopes. This cuisine is earthy, generous, and alive with history. Come hungry, come curious, and prepare to cook the way Oaxaqueños have for thousands of years.
