Town in collaboration with Wine Alliance and Sauvage Restaurant is pleased to present the sixth edition of Supper Club on Thursday March 27th at The Garret Loft. Featuring some of the very best talent in the industry, both locally and internationally; Supper Club is an intimate dinner experience like no other.
The evening features renowned chef Tracy Little, who is celebrated for her acclaimed concept Sauvage, located in Canmore, AB. Chef Little has designed an exquisite five-course menu, with a focus on sustainable ingredients foraged from field, forest and stream, thoughtfully paired with sustainable and small production wines from Wine Alliance and tastefully curated cocktails by the always popular Sugar Water.

About Chef Tracy Little:
Driven by her inexplicably close connection to nature, Chef Tracy Little translates her deep roots of a childhood spent captivated by the untamed Canadian wilderness into imaginative dishes entwined with an immersive culinary experience. Following a fine dining education at Fanshawe College in London, ON, her illustrious career has led her through positions as a chef, pastry chef, chef de partie and executive chef in esteemed kitchens at the Rimrock Hotel, Rouge and Milton Lake Lodge. In 2020, Tracy acquired Tapas Restaurant; it was time to actualize her dream of a meticulously crafted farm to table dining experience. Through partnerships with local farmers and growers, Tracy expertly delivers vibrant seasonal ingredients steeped in narratives that capture the soul of our deep relationship with the wild world around us. Tracy is passionate about uncovering the magic and influences of nature, and it's these experiences that have shaped the food philosophies she shares with you at Sauvage. When she’s not wielding a knife in the restaurant, Tracy is likely in the wild; foraging, fishing, hunting and basking in the inspiration of the great outdoors.

Welcome to the wilderness; that is Sauvage – from the old French Sauvage meaning “forest”. Tucked away in a quaint old house in the heart of Canmore, Chef Tracy connects with guests through her love of the mountains, food and foraging. Her team incorporates this into everything they do with a focus on sustainability and craftmanship. Here we offer a tasting menu curated with each season, prone to changing often as we highlight ingredients that are fresh and available in the moment. Sauvage truly showcases sustainability using ingredients such as sumac or spruce to mimic citrus flavours, incorporating pine into our brioche, and supporting as much Canadian businesses as possible from the wine in your glass to the honey from our own bees. Sauvage’s team works cohesively and with ease to provide an experience like no other to every guest that walks through our antlered archway.
