Renowned Chef Travis Milton transforms the legendary Montreal Cabane à Sucre sugar shack tradition into pure culinary magic!
About this Event
SUMMERS Community Wine Dinner Series: Sugar Shack in the Cellar with Chef Travis Milton!! Summers Cellar, Saturday, January 24th, 6pm
Selected and Served by Charlie Berg
The Montreal sugar shack tradition (cabane à sucre) is a joyous celebration of the maple syrup harvest, featuring epic family-style feasts of fluffy pancakes fried in duck fat, maple-glazed ham, smoky baked beans, split pea soup, pork cracklings, meat pies, and endless syrup pours—capped by maple taffy on snow and rich desserts. Legendary chef Martin Picard of Au Pied de Cochon elevated this rustic ritual into world-famous decadence at his Cabane à Sucre, with over-the-top creations like foie gras poutine, lobster tourtière, and maple-drenched pig's head that sell out instantly. Now, for an unforgettable twist, join us at this very special SUMMERS Community Wine Dinner on January 24 at 6pm, where James Beard semifinalist Chef Travis Milton (there's a book about him called Victuals, check it out!)—the Oracle of the Applachian food culture from Southwestern Virginia—reimagines Picard's wild maple magic through mountain soul, blending heritage pork, heirloom beans, collards, and local preserves into a one-night-only feast of rich, maple-kissed Appalachian brilliance paired with perfect wines.
Here’s the iconic excess of Martin Picard's legendary Cabane à Sucre—pure Quebec
