About this Event
At Nobelhart & Schmutzig, will be cooking a one night menu built around the peak of the season: summer vegetables from Brandenburg, wild ingredients gathered by Cholena de Koningh, and ferments prepared over the past months.
The evening brings together some of the people whose work I admire most. Cholena will create the non-alcoholic pairing, while the wine pairing is a collaboration with Drops and Schätzel. Their wines, aged under flor, carry a remarkable salinity, depth and quiet umami tension — a style that feels naturally at home alongside a kitchen that thinks in fermentation.
Throughout the dinner, Berlin-based producer S Katz will perform live, adding another layer to the experience.
What makes this dinner special for me is the opportunity to work with complete freedom, bringing together many of the techniques, preparations and ideas that inspire my cooking.
