St. John's DipMy mother taught me to make this dish when I was ten, around 1971. It's easy to put together and so far has been a hit every time I've made it. Great as an appetizer or a side dish. For a larger crowd, double and place in 9 x 13 pan.
Ingredients
1 lb lean hamburger
1 can refried beans
1 pkg taco seasoning mix
8 oz sour cream
4 oz diced green chiles
1 c shredded extra sharp cheddar cheese
1/2 c chopped black olives (optional)
1/2 c chopped red pepper (optional)
1 pkg tortilla chips
Directions
1. Brown the hamburger, over medium heat, and drain off fat.
2. Add refried beans and mix with browned hamburger until smooth.
3. Mix in taco seasoning mix.
4. Spread the hamburger mixture on the bottom of an 8x8 baking pan.
5. Spread sour cream over the hamburger mixture.
6. Top sour cream with diced green chiles.
7. Cover green chiles with shredded cheddar cheese.
8. If using, sprinkle chopped black olives and/or chopped red pepper over the shredded cheddar cheese, but don't cover it entirely.
9. Place in a pre-heated 350° oven and bake for 20 to 30 minutes. Cheese should be melted and bubbly.
10. Serve with tortilla chips.
