Join wild food guide and cook Mike Cutting for a deep dive into the wonderful world of wild spring greens.
Cultures around the world have a variety of catch all terms to describe the various spring greens available to them ('Horta' in Greece is one example). These greens are often used interchangeably to create simple, delicious dishes which are the very essence of traditional peasant cooking.
On this half day course we will target our foraging efforts towards a select group of wild spring greens, learn about their correct identification and sustainable harvesting, then break out the cooking equipment to create a variety of dishes which make the most of these abundant and nutritious wild ingredients.
We will also discuss appropriate preservation methods for spring greens to make your harvest last well beyond the spring time.
In addition to our wild harvest you will have the chance to try a variety of my homemade wild crafted preserves and ferments that are a staple of my wild food events.
