Have you ever eaten a feast in a Filipino home and wished you could learn to make some of the dishes yourself? Intrigued by the Filipino chefs in the news for making waves in some of the hottest food markets across the United States? Then, this is the class for you!
The Philippine islands have vibrant culinary traditions that reach back centuries. The locals have also adopted ingredients and culinary influences brought by traders and invaders, brilliantly melding them with their distinct food culture. With over 2,000 inhabited islands, there are as many ways to cook traditional Filipino dishes as there are home cooks to make them.
In this class, Josh Mamaclay, our marketing and engagement manager (and a chef instructor on Milk Street TV!) shows you how to cook his take on recipes that he grew up with: a weeknight version of hearty peanut stew known as kare-kare, as well as a vegan-friendly adobo- the ubiquitous Filipino dish that inspired our brand new Classic Blend: Filipino Adobo spice. All the while, he'll explore the history that influenced the salty-sour-funky flavors and defines Filipino cuisine.
Your ticket for this demonstration-style class includes recipes along with a sample of our Adobo Spice blend to try at home.

Josh Mamaclay has been fascinated by flavor since he first dove into the back of the pantry at 10 years old. His passion for food brought him to Johnson & Wales University where he earned his bachelor's degree in culinary arts and food service management. Since then, Josh has worked in pizza joints, fine dining restaurants, and a chocolate factory. He has developed recipes for meal kit delivery brands like Purple Carrot and TB12. Now, when he isn't tasting every spice possible or photographing everything at Curio, Josh instructs on Milk Street TV and at the Milk Street Online Cooking School. Otherwise, he's usually thinking or talking about food, singing with his husband while strumming his ukulele, or leading intrepid adventurers through a fantasy-filled game of Dungeons & Dragons.
