Welcome to the Third "Soil To Soul" Dinner of SUMMER 2024The theme for this Season is: We Are Where We Eat
Dinner #3 is a multicourse, family-style dinner, with seasonal N/A beverage pairing from Erth BevCo and local beer/wine available for purchase through our gracious host, Zee's Rooftop.
This dinner will feature a short guided breathwork session with our friend Rome Za, of Seven Generations Wellness Institute.
We are grateful to have Chef Cindy of Roots of Mexico collaborating for some amazing dishes on this menu.
The menu for each dinner features 13 dishes, highlighting local seasonal ingredients, while tying together familiar and new local flavors. Gut health is a priority, so there will be a full ferments bar by The Good Food Farmacy
The dishes of this dinner will be rooted in the land, cuisine using locally grown, foraged, and fermented ingredients.
Course 1.
Grilled corn elotes quarters, crème fraiche, cotija, lime, cilantro
Smoked elderberry/blackberry steelhead
Cantaloupe, apple salad, ginger, garam masala, raisins, honey
The Good Food Farmacy ferments and Evans Farmstead cheeseboard
Course 2.
Lamb liver pate with local apples
Grilled kale green goddess salad with shaved Evans Farmstead cheese and Gastons bakery croutons
Grilled okra/milkweed, garam masala, Apothec208 turmeric honey glaze
Roasted summer squash, Ferg's Fabulous Fungi, cumin/coriander, goat cheese
Course 3.
Roots of Mexico homemade tortillas, local corn and 1000 Springs Mill organic flour
Roasted tomatillo salsa verde
Local frijoles refried with Kings Crown organic camelized onions
Norther Latitude Spanish wild rice
Bruce Ranch Beef grass fed chili verde and Lengua
Course 4.
Manchego cheese Flan with goat milk caramel
Oatmeal dried plum cookie, cinnamon, cardamom, ginger, crunchy
Dinner will start at 6PM with drinks, and gut-friendly ferments, followed by three paced courses, with dessert accompanied by local music from Dan Costello.
The dinner is a container to meet other people who are passionate about local food. Each dinner will include conversation topic prompts. You may just leave with new best friends!
