In collaboration with the MCCSA’s Successful Communities, the Mexican Community, the Latin American Society of South Australia and supported by the City of Adelaide, we bring you our next Rotaract Cooking Class! We’ll be learning how to make Mexican sopes with refried beans topped with sauce, lettuce, cream and cheese ?
THE CHEF:
Renato is a passionate cook of the Mexican cuisine. He loves to prepare super easy and delicious recipes. He is not a chef but enjoys cooking for family and friends sharing the amazing range of options in the Mexican cuisine. He likes to play with textures and flavours making dishes that capture your senses not just your taste buds. He cooks poultry, beef, lamb and fish. That translates to examples including Chicken Tinga, Pulled Beef, Lamb Barbacoa and Pescado “a la talla” (mangrove charcoaled fish). They bring taste and stories from gatherings in cities and in the country going from coast to coast in Mexico and from North to South! ?
THE DISH:
A sope is a traditional Mexican dish consisting of a fried masa base with savory toppings. It is a popular street snack that you'll find almost everywhere in Mexico! Also known as picadita (in Tierra Caliente, Guerrero), it originates in the central and southern parts of Mexico, where it was sometimes first known as pellizcadas. The foundation of a sope is a homemade corn flour shell that we like to think of as a little cup; thicker than a tortilla, the sope shell has the added benefit of a rim around the edge to keep in all of the toppings. Sopes are comprised of lime-soaked, deep-fried masa circles topped with refried beans, cheese, lettuce, onions, salsas and typically, meat.
