Finca La Sirena Honey Costillo Osmotic Dehydration Peach
Located in the Quindío region of Colombia, Finca La Sirena is a family-operated farm dedicated to sustainable cultivation and innovative processing. This batch of coffee underwent a process called Osmotic Dehydration, where the coffee cherries are fermented in sealed tanks before drying over ten days or until the moisture content is reduced to 10%. This batch used honey and peaches for processing, and the beans have taken on a slight peach flavor. Coffee tastes like coffee, but when you're paying attention, it tastes like a lot of other things, too. This one has notes of peach cobler, meyer lemon, and jasmine.
At this event, we'll take small groups to the lab every 30 mintues for a demonstration with our roaster, Joe Marvin. He'll show you the ins and outs of our sample roaster and provide a variety of very different coffees to sip on.
Afterward, we'll serve a full mug of this unique and adventurous coffee from Colombia, paired with a slice of ginger peach cake from our bakery. You'll leave with a better understanding of coffee processing and our approach to roasting as well as a 4oz. bag of this fancy pants coffee to brew at home.
